Tne Many Faces of Mexican Cake Making

Mexico has their share of sweets. You can find sweet drinks, to candies and chocolates, and of course cakes. One cake that is popular and simple to make is the Mexican Chocolate Pound cake. What makes this cake a classic is the addition of Mexican chocolate and cinnamon. It is simple to make and very tasty!

If you want something lighter than Mexican chocolate cake, you could try Tres Leches Cake. In English, this means “cake of three milks.” This Mexican cake is a butter-based cake, soaked with condensed milk, whole milk, and evaporated milk. The cake contains quite a few air bubbles because the milk does not contain butter.

The top of the cake can have fruit such as raspberries to add extra flavor. This cake is common in many parts of Latin America. The origin is not surely known, but is thought to be between Nicaragua and Mexico, where the cakes were found the earliest. Tres leches cakes are great at parties and other special celebrations.

It is no secret that Mexicans love spices. Jalapeos and chilies are sometimes added to Mexican cakes containing chocolate. Rather than tasting strange like you might imagine, it gives the cake an interesting kick. The Mayas combined cocoa and chili for hundreds of years. Chocolate Jalapeo Cake, for example, has a spicy kick to it, because of the finely chopped jalapeos added to the recipe.

Another popular cake that is made in Mexico is called Rosca. You will have to wait until the holiday season to find it though because it is a cake that is made around December until February. It is made into a circle shape that represents the crown of the three kings. The cake is flavored with lemon and orange zest and also contains almonds.

The cake is usually topped with colorful fruits and inside is a miniature baby Jesus doll. Whoever gets the doll in their slice of cake has to provide the Rosca for the next celebration. You can buy this cake from local bakeries or make your own.

If you do not want Mexican milk cake and it is not the occasion for Mexican wedding cakes, what about Mexican crepes or one of the other wonderful treats Mexican cuisine has to offer? These are often topped with Cajeta, a kind of caramel sauce, and toasted pecans. Sometimes other toppings are used on Mexican crepes as well, such as chocolate sauce, cinnamon, raspberries, or cream.

If ever having a fiesta, try baking a cake. Some cakes have tropical fruits in them, while others are richer and contain cinnamon. Whatever you enjoy in other cakes, you will find in Mexican style ones. To make sure the cake is authentic, purchase actual Mexican cocoa and follow the recipe accordingly. It is sure to be a big hit at your next celebration!

Tips for Making Regular Cake Recipes Gluten Free

It seems there is so much searching for a good cake recipe that is already gluten free, when making a regular cake recipe with gluten free flours is usually quite simple. There are exceptions to every rule of course, but with my experience to date I find that cake recipes using the regular ingredients of flour, sugar, butter or shortening, eggs and a liquid of some kind are easily converted. If you have a good chocolate cake recipe, it will likely yield a good gluten free chocolate cake also. The same goes for a white cake, yellow cake or other flavor.

I made an old favorite recipe for a Caramelized Sugar Cake recently, and these days I am always curious how a gluten free version will come out. This cake is delicious, with caramelized sugar syrup made from scratch just beforehand. The syrup gives a light caramel flavor and color to the cake, and an added dimension to the texture. I have loved this recipe for so long that I decided, once we finished off the regular version, to try it again with gluten free flours.

So far, in my experience, I have been adding xanthan gum to any recipe using gluten free flour mixtures of any kind. If the recipe uses more than 2 cups of flour, I add 1 teaspoon of xanthan gum to the total recipe. If the recipe is small, as with pancakes, I use about a half teaspoon per recipe. Some feel that xanthan gum also causes them problems, so if this is the case and you know of another substitute for the thickening and structure that xanthan gum gives, please feel free to try that instead. Psyllium husks are a thickener also, and could possibly be used in place of xanthan gum, though I have no measure for how much at this time.
If you are gluten intolerant, you may already have a favorite gluten free flour mixture. For this cake I used a pre mixed batch of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. There are many good all purpose gluten free flour blends on the market also, and I have used some of them with perfect results. The gluten free options for this cake are the 1 to 1 substitution of gluten free flour, the addition of 1 teaspoon of xanthan gum and one added egg yolk, as the batter seemed too thin.

Caramelized Sugar Cake

1/2 cup granulated sugar
1/2 cup boiling water

Melt the sugar in a saucepan. Once completely melted, allow the syrup to become a deep amber. Remove from heat and add in the boiling water. Be very careful as it will splatter about and again become semi solid. Once back on heat, stir with a wooden spoon or silicone spatula until liquefied. Reduce the syrup slightly. Set aside to cool.

1 stick butter
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
2 eggs
2 1/2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup water
3 tablespoons caramelized sugar syrup

Preheat oven to 350 degrees. Grease and flour two 8 inch round cake pans. Cream the butter and sugar until light and fluffy. Add in eggs, one at a time until well combined. Sift together all the dry ingredients. Combine the water and the 3 tablespoons of sugar syrup. Beat in the dry ingredients, alternately with the liquid ingredients, in three stages. Beat well for a couple of minutes longer. Pour batter into the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

This cake is excellent with a simple buttercream or cream cheese icing. I filled my gluten free version with a coconut pecan mixture and topped it with a little buttercream icing. It could also be topped with the coconut pecan mixture, or even glazed with chocolate. Do try this recipe, whether it is the regular flour version or gluten free.

I did a little baking last night, I made this to bring in to work on Monday – I find it is best to let cheesecakes set for a day before serving. My brother sent me this recipe a few days ago – I had to change it slightly, it called for Hazel Nuts but I couldn’t find any so I used Macadamia Nuts. It also has a little Jack Daniels #7 (just a little).

Get the Best Chocolate Cake Recipe

What with the deluge of food recipes available today, finding the perfect chocolate cake recipe is extremely easy. You can make use of a lot free recipes which will yield tasty outcomes. You can visit a lot of websites to find that perfect recipe and you can choose one depending on who is going to eat the cake; whether it is kids, weight-conscious adults or diabetics.

Family and friends are the conventional way of searching for any type of food recipes that you might be looking for. I am sure we all have a friend or relative who has an unbelievable chocolate cake recipe that everyone eagerly waits for at parties or other get-togethers. You should get great ideas and tips from such people.

But seek advice from a family member or friend may not work out too well. Not everybody is willing to share. On the one hand, she might be very flattered that you liked her baking style and would love to learn from her. But on the other she might not want to share her cake recipe or any other food recipes with you for fear of losing her title as best chef for that particular dish. So much so she might even give you a recipe after changing it a bit so the outcome is not as good as hers. This is really sad but there are people who do things like that.

You may also refer to some cookbooks recipes for an old-fashioned approach. This way you can be sure that you will find a good enough cake recipe or it would not have appeared in print otherwise. The only problem with cookbooks is that you have to pay for them and you can never be sure how many food recipes from the book you will really use.

Yet another option which you’ll probably agree with me is the best is to look for the ideal chocolate cake recipe on the Net. Not only for cakes, but there are thousands of food recipes that can give you great results. Another advantage is that these sites allow users to rate the free recipes so you get a fair idea as to whether it worked for other people or not. Also you can check the other recipes of that particular person once you come to realize that what you tried earlier was good.

The only negative aspect about looking for food recipes online is that it can get overwhelming when your search throws up a deluge of perhaps a cake recipe. You can narrow down your search by searching specifically for a “chocolate cake recipe” or and “eggless cake recipe”. This will definitely make things a lot easier. You can also add other words or phrases like “extra moist” to narrow down your search even further.

So hurry up, get that chocolate cake recipe and let’s all have some. Finding a good source for food recipes is enough reason to celebrate!

Devouring chocolate cakes on all special occasions

There are various types of cakes available in the market but what has been the most popular for a number of years are chocolate cakes. Chocolate cakes come in various shapes, sizes, and tastes but the principal idea is to have layers of chocolate cream and chocolate shavings on the top. The very description confirms how delicious chocolate cakes are and hence a primary dessert in most occasions, ranging from birthdays to weddings. Chocolate cakes look delicious as well as they come with chocolate shavings and chocolate frostings on the top, another reason why such cakes are the most popular in the world.
The main ingredient in chocolate cakes is chocolate or cocoa powder, along with which white sugar, flour, baking powder, baking soda, milk and eggs are a must. The basic recipe is same for any chocolate cake, though ingredients differ if it is a dark chocolate cake or if one wants to put in a bit of vanilla essence. The recipe also differs if one wants to make a black forest cake or a fudge cake or a chocolate soufflé cake, all of which are variations of the chocolate cake as we know it. So the basic recipe is the same but what differ are certain ingredients which alter the taste of the cake.
Chocolate cakes nowadays are readily available in most bakeries, cake shops, and confectionaries since the demand of the cake is so high. Chocolate cakes are the most sought after and ordered dessert dish in most festive occasions as well as family gatherings and celebrations because the very feel of a chocolate cake is that of a sweet and soft melt in your mouth experience which goes very well with celebrations and special occasions. Chocolate cakes are also delivered at homes from bakeries and a number of households avail such a service.
Birthdays are individual occasions of happiness where friends and family celebrate with a lot of heart. A chocolate birthday cake has been a popular item in birthdays for a long time because not only does it taste good but also the fact that chocolate goes hand in hand with any occasion of happiness and there is no better occasion than a birthday for a chocolate cake to be enjoyed by all. A chocolate birthday cake is often a large, two storey cakes with exclusive chocolate shavings and chips as decorations to make it look like a cake fit for a special occasion.
Usually, chocolate cakes baked on occasions of a birthday have a number of decorations such as chocolate flowers or chocolate animals if the birthday boy or girl is a kid. Apart from the main cake, additional bonuses are the choco-flowers and frostings which are devoured with equal enthusiasm. It is recommended that a chocolate cake for a birthday is ordered beforehand and not on the day itself because firstly the demand for chocolate cakes are high and the possibility of getting a satisfactory one is always less and secondly the cake ought to be enough for all the invitees.

Chocolate cakes can rightly be crowned as the king of cakes as they are popular all over and are not very difficult to make either.

Gluten Free Cupcake Recipe

So I started to search out ways to indulge in gluten free cupcake recipes that weren’t loaded down with sugar or white flour but didn’t compromise on taste. High glycemic foods cause your blood sugar to spike, raising insulin levels. Unfortunately, most gluten free flours use a combination of high glycemic ingredients like rice flour, potato starch, tapioca flour and sorghum flour. So while the gluten is missing, all the blood sugar-spiking effects are still there.

After searching, tasting and cupcaking I found Kelley Herring of the Healing Gourmet. Her company educates on how foods promote vitality and protect against disease. Kelley is the Editor-in-Chief of the Healing Gourmet book series published by McGraw-Hill , including Eat to Fight Cancer, Eat to Beat Diabetes, Eat to Lower Cholesterol, Eat to Boost Fertility and Your Plate, Your Fate. In her Guilt-Free Desserts Guide is a 80 page recipe book filled with such treats as gluten free cheesecake, cupcakes, brownies, cakes, cookies, creme brulee, mousses and pies… OH MY! I have been baking and chocholating my way through her recipes so my cupboard no longer has things like white sugar, butter or white flour but has been replaced by agave syrup, apple sauce, stevia, coconut oil, coconut flour and so many other fun and thigh-friendly ingredients.

Banana Cake Recipe

Banana Cake Method
Banana cake is a wholesome dessert but not as sinfully calorific or fatty as other chocolate-based puddings and pies. The use of butter is minimal and its major component is banana, which is loaded with food value, from minerals to roughage and vitamins. At the same time, most of the sweetness comes from the fruit so the use of sugar too is less. When you feel the hunger pang, few things comfort like a slice of Banana cake. It is a wholesome snack to have between two meals. If the readymade cake is not available, you can still take solace in the fact that you can bake it in a moment. The process is even faster when you are equipped with a microwave oven.
