Mexico has their share of sweets. You can find sweet drinks, to candies and chocolates, and of course cakes. One cake that is popular and simple to make is the Mexican Chocolate Pound cake. If you want something lighter than Mexican chocolate cake, you could try Tres Leches Cake. In English, this means “cake of three milks.” This Mexican cake is a butter-based cake, soaked with condensed milk, whole milk, and evaporated milk. The cake contains quite a few air bubbles because the milk does not contain butter.

The top of the cake can have fruit such as raspberries to add extra flavor. This cake is common in many parts of Latin America. The origin is not surely known, but is thought to be between Nicaragua and Mexico, where the cakes were found the earliest. Tres leches cakes are great at parties and other special celebrations.

It is no secret that Mexicans love spices. Jalapeos and chilies are sometimes added to Mexican cakes containing chocolate. Rather than tasting strange like you might imagine, it gives the cake an interesting kick. The Mayas combined cocoa and chili for hundreds of years. Another popular cake that is made in Mexico is called Rosca. You will have to wait until the holiday season to find it though because it is a cake that is made around December until February. It is made into a circle shape that represents the crown of the three kings. The cake is flavored with lemon and orange zest and also contains almonds.

The cake is usually topped with colorful fruits and inside is a miniature baby Jesus doll. Whoever gets the doll in their slice of cake has to provide the Rosca for the next celebration. You can buy this cake from local bakeries or make your own.

If you do not want Mexican milk cake and it is not the occasion for Mexican wedding cakes, what about Mexican crepes or one of the other wonderful treats Mexican cuisine has to offer? These are often topped with Cajeta, a kind of caramel sauce, and toasted pecans. Sometimes other toppings are used on Mexican crepes as well, such as chocolate sauce, cinnamon, raspberries, or cream.

If ever having a fiesta, try baking a cake. Some cakes have tropical fruits in them, while others are richer and contain cinnamon. Whatever you enjoy in other cakes, you will find in Mexican style ones. To make sure the cake is authentic, purchase actual Mexican cocoa and follow the recipe accordingly. The Tiramisu Recipe That Easy Enough To Make In Your Own Kitchen

Ingredients For Tiramisu Recipe:

* Non-stick spray with flour
* 5 cups all-purpose flour
* 3 ½ cups sugar
* 3 teaspoons baking soda
* 2 teaspoon baking powder
* ½ teaspoon salt
* 2 cups hot water
* 4 tablespoons instant espresso powder
* 2 cups vegetable oil
* 6 large eggs
* 2 cups sour cream
* 3 ½ cup heavy whipping cream
* 6 tablespoons coffee liqueur
* 16 ounces semisweet chocolate
* Mascarpone Filling, recipe (Read recipe below tiramisu recipe)
* 12 ounce packages cake-like ladyfingers, split

Directions:

1. Start your tiramisu cooking recipe by preheating the oven to 180° C. Spray 6 cake pans with non-stick spray with flour.

2. In a separate bowl mix the flour, sugar, baking soda, baking powder and salt.

3. In another bowl, mix the water and espresso powder and keep stirring till it’s thoroughly mixed.

4. Add in the oil and eggs to the flour mixture and keep whisking until smooth. Add the liquid espresso mixture to it as well and keep mixing with a beater at medium speed till thoroughly dissolved.

5. Now stir in the sour cream and mix well. Put the batter evenly into the prepared pans for the tiramisu recipe.

6. Bake until well cooked for around 20 minutes, you’ll know by inserting a fork in the centre. If it comes out clean, it’s cooked.

7. Cool the recipe in the pans for around 12 minutes, remove and cool again.

8. Sprinkle each cake with the coffee liquer.

9. In a separate saucepan, mix the chopped chocolate and heavy cream. Cook over a medium-low flame and keep stirring constantly. The chocolate should be of a smooth consistency for the recipe. Cool for 15 minutes.

10. Put a thin layer of the chocolate frosting recipe and then the mascarpone filling over one cake layer. Add the ladyfingers on top. Put another layer of cake and repeat the procedure once more. Those 6 cakes should make two tiramisu recipes.

11. Spread the remaining chocolate frosting on the top and sides of the cake.

12. You can store your tasty recipe for up to 3 days.

Ingredients For Mascarpone Filling Recipe:

* 32 ounces mascarpone cheese
* ½ cup sugar
* 1 cup heavy whipping cream

Directions For Mascarpone Filling Recipe

1. In a medium bowl, mix the mascarpone and sugar in a food processor until creamy consistency has been achieved.

2. Add the cream, beating until the mixture thickens.

3. Cover and refrigerate for up to 3 days.

Tips for Making Regular Cake Recipes Gluten Free

It seems there is so much searching for a good cake recipe that is already gluten free, when making a regular cake recipe with gluten free flours is usually quite simple. There are exceptions to every rule of course, but with my experience to date I find that cake recipes using the regular ingredients of flour, sugar, butter or shortening, eggs and a liquid of some kind are easily converted. If you have a good chocolate cake recipe, it will likely yield a good gluten free chocolate cake also. The same goes for a white cake, yellow cake or other flavor.

I made an old favorite recipe for a Caramelized Sugar Cake recently, and these days I am always curious how a gluten free version will come out. This cake is delicious, with caramelized sugar syrup made from scratch just beforehand. The syrup gives a light caramel flavor and color to the cake, and an added dimension to the texture. I have loved this recipe for so long that I decided, once we finished off the regular version, to try it again with gluten free flours.

So far, in my experience, I have been adding xanthan gum to any recipe using gluten free flour mixtures of any kind. If the recipe uses more than 2 cups of flour, I add 1 teaspoon of xanthan gum to the total recipe. If the recipe is small, as with pancakes, I use about a half teaspoon per recipe. Some feel that xanthan gum also causes them problems, so if this is the case and you know of another substitute for the thickening and structure that xanthan gum gives, please feel free to try that instead. Psyllium husks are a thickener also, and could possibly be used in place of xanthan gum, though I have no measure for how much at this time.
If you are gluten intolerant, you may already have a favorite gluten free flour mixture. For this cake I used a pre mixed batch of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. There are many good all purpose gluten free flour blends on the market also, and I have used some of them with perfect results. The gluten free options for this cake are the 1 to 1 substitution of gluten free flour, the addition of 1 teaspoon of xanthan gum and one added egg yolk, as the batter seemed too thin.

Caramelized Sugar Cake

1/2 cup granulated sugar
1/2 cup boiling water

Melt the sugar in a saucepan. Once completely melted, allow the syrup to become a deep amber. Remove from heat and add in the boiling water. Be very careful as it will splatter about and again become semi solid. Once back on heat, stir with a wooden spoon or silicone spatula until liquefied. Reduce the syrup slightly. Set aside to cool.

1 stick butter
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
2 eggs
2 1/2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup water
3 tablespoons caramelized sugar syrup

Preheat oven to 350 degrees. Grease and flour two 8 inch round cake pans. Cream the butter and sugar until light and fluffy. Add in eggs, one at a time until well combined. Sift together all the dry ingredients. Combine the water and the 3 tablespoons of sugar syrup. Beat in the dry ingredients, alternately with the liquid ingredients, in three stages. Beat well for a couple of minutes longer. Pour batter into the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

This cake is excellent with a simple buttercream or cream cheese icing. I filled my gluten free version with a coconut pecan mixture and topped it with a little buttercream icing. It could also be topped with the coconut pecan mixture, or even glazed with chocolate. Do try this recipe, whether it is the regular flour version or gluten free.

I did a little baking last night, I made this to bring in to work on Monday – I find it is best to let cheesecakes set for a day before serving. My brother sent me this recipe a few days ago – I had to change it slightly, it called for Hazel Nuts but I couldn’t find any so I used Macadamia Nuts. It also has a little Jack Daniels #7 (just a little).

So I started to search out ways to indulge in gluten free cupcake recipes that weren’t loaded down with sugar or white flour but didn’t compromise on taste. Start to Finish: 1.5 hours

Ingredients

• 1/4 cup organic coconut milk

• 1 Tbsp. Bob’s Red Mill Coconut Flour

• 1 pinch Celtic sea salt

• 3 large pastured eggs

• 1/2 cup organic erythritol

•1/2 tsp. stevia extract

• 1/2 tsp. aluminum-free baking powder

• 2 cups Bob’s Red Mill Unsweetened Shredded Coconut

• 2 Tbsp. organic virgin coconut oil

• 1/4 cup ground organic almond flour, packed

• 1 Tbsp. organic vanilla extract

Preparation

1. Preheat oven to 325 degrees Fahrenheit. Line a mini muffin pan with papers and spray with coconut oil spray.

2. In a Magic Bullet or food processor, add coconut and grind into a fine meal.

3. Add almond flour, coconut and remaining dry ingredients to a large mixing bowl.

4. In a small saucepan, melt coconut oil over low heat. Add eggs, vanilla extract, and coconut milk and beat well.

5. Add dry ingredients into wet ingredients, and mix on medium speed for 2 minutes.

6. Line a mini muffin pan with mini muffin papers, and spray with extra virgin olive oil spray.

7. Pour batter into mini muffin cups, about 3/4 full.

8. Transfer to oven and bake for 18-20 minutes, until springy and firm to the touch.

9. Cool slightly and serve.
